A really simple, really healthy green salad

I know what you’re thinking; aren’t all green salads simple and all healthy? Yes that is usually true, but this one is even more so. Thanks to my friend Marsha who made this for our dinner last night. The reason it’s so darn good and so healthy is that the dressing is just lime juice and salt - there is no oil in the salad. Now I’m not opposed to oil, in fact olive oil is always being promoted for it’s healthy fats. But if a salad tastes good without oil, well then I’m going to keep making it that way. The fat in the salad comes from the avocado and the mixture of that with the salt and the lime juice is just so light and yummy. Try it!

Ingredients:

  1. Romaine lettuce chopped
  2. tomato chopped (homegrown if you can or farmer’s market)
  3. red onion chopped
  4. avocado chopped
  5. lime juice
  6. kosher salt

Directions:

  1. Mix all ingredients and enjoy!
